In our quest to bring wellness into every aspect of our daily lives, we discovered a reimagined version of the classic Chicken Salad. Just as the body needs adjustment and alignment, our diets also require balance and thoughtfulness. Today, we’re thrilled to share a recipe that combines both taste and health benefits: Nick’s Favorite Creamy Tahini Chicken Salad, by Organic Olivia and Sunkissed Kitchen.

The RAI Team loves this twist on the classic chicken salad because it has a bit of everything; rich flavours, interesting textures, sans mayo, satiating and comforting.  It is perfect for a make ahead lunch on the go great for the mind and body.

Ingredients: The Foundation of Flavor

Before we dive into the how-to, let’s take a moment to appreciate the carefully selected ingredients that make this salad a powerhouse of nutrition:

Chicken Breast: A lean source of high-quality protein that’s essential for muscle repair and growth.

Tahini: Made from ground sesame seeds, tahini is not just a flavor enhancer; it’s also rich in healthy fats, vitamins, and minerals.

Red Grapes: Adding a sweet, juicy crunch, grapes are packed with antioxidants and vitamins.

Celery and Green Onion: These bring a delightful crunch and zing, packing the dish with fiber and essential nutrients.

Walnuts: A source of omega-3 fatty acids, walnuts add a satisfying crunch and contribute to heart health.

Seasoning: A blend of garlic, lemon juice, dill or another fresh herb of your choice (the RAI Team highly recommends dill, fresh, vibrant and great for digestion) and Dijon mustard not only elevates the flavor profile but also adds a dose of antioxidants and vitamins.

Preparation:

Begin by cooking the chicken breast until tender and shred or dice it into bite-sized pieces.

Mixing the Dressing: In a separate bowl, whisk together the tahini, lemon juice, garlic, dill, and Dijon mustard until you achieve a creamy consistency. This dressing is what brings the whole salad together, binding all the elements together with its rich, nutty flavor.

Combining: Gently fold the chicken, grapes, celery, scallions, and walnuts into the dressing until well combined.

Serving:

Serve this salad on a bed of fresh greens, in a sandwich or a wrap.  Enjoy!
