The Recipe:

The RAI Team loves the simplicity of these High-Protein Egg Bites. You’ll need staple ingredients like eggs, milk, cheese, and your choice of vegetables and herbs. The process is straightforward: whisk eggs with milk and spices, chop your vegetables, and layer them in a muffin tin. Pour the egg mixture on top and bake until golden and fluffy.

Ingredients:

  • ¼ cup shredded cheese of your choice
  • 8 eggs
  • ¼ cup milk
  • 1 red pepper – chopped
  • 2 small tomatoes – chopped
  • 1/3 cup of greens of your choice
  • 2 scallions – chopped
  • Spices of your choice – oregano, garlic, red pepper flakes, salt and pepper to taste

Put it all together:

  1. Preheat oven to 350 degrees
  2. Whisk together eggs, mild and spices in a mixing bowl
  3. Combine all the chopped veggies in a separate bowl
  4. Grease a muffin tin with oil of your choice
  5. Add a small dollop of chopped veggies and top with some cheese to fill each about 1/2 way
  6. Pour the egg mixture over the veggies and cheese roughly ¾ of the way full
  7. Bake for 20 minutes. 
  8. Enjoy!
